It’s pumpkin spice season my dearies! Which means my mornings are now full of it. I wanted to share one of my absolute favorite recipes for fall mornings, pumpkin spice pancakes!
This recipe it extremely simple and easy to whip up! I actually made this recipe without eggs because I didn’t have any! So no eggs, no problem.

- Turn your burner to medium heat and start warming a large sauce pan.
- Combine your dry ingredients (Flour, Sugar, Brown Sugar, Cinnamon, Pumpkin Pie Spice, Baking Powder, & Salt,) in a medium mixing bowl.
- Add in your wet ingredients (Pumpkin, Milk, & Vanilla Extract). Add as much pumpkin as you like! I typically add 1/2 cup.
- Whisk together all ingredients.
- Butter the pan OR use your favorite oil. I use coconut or avocado oil!
- Add batter in 1/4 or 1/2 cups to pan and then flip when pancake batter starts to bubble. That means they’re ready to flip!
- Top with powdered sugar, syrup, pumpkin jam, Nutella, you name it!
Now get to the kitchen and start cooking! I love cooking with Andrew and we make yummy breakfast together… well. I cook and he keeps me company. haha!
